40 – 50 Days |Â Pak Choi, or Bok Choy, is a cool season oriental cabbage grown in spring, fall, and into winter. Variety does not form heads and has green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard greens. Due to its popularity with flea beetles, fall is the often recommended. This Asian green is delicious raw, or as a main ingredient in stir fries.

Plant 1/4″-1/2″ deep, in rows 24″-36″ apart, thinning to 12″-18″ apart once the seeds sprout. These plants are biennials and can be prone to bolting. Bolting in the first year is commonly caused by cold weather followed by a period of rising temperatures, tricking the plant into thinking it has gone through a winter. Dry soil can also cause bolting, as can sustained hot summer weather. Bok choy is not a fan of hot weather, so gardeners typically grow two crops, one in spring and another in fall. For spring plantings, start seeds indoors 4 to 6 weeks before your last spring frost date. Count backward 50 days from your first frost and direct seed for fall harvests.
